Chat Sauvage Assmannshausen Pinot Noir 2016
– Elegance from the Rheingau with inspiration from Burgundy

This exquisite Pinot Noir from Chat Sauvage is created with passion and ambition. The grapes come from the winery’s oldest fields, where the vines are between 40 and 50 years old. The owner, Günter Schulz, was inspired by his love of Burgundy and set out to create wines that could compete with the best of this famous region. After eight years of dedicated searching, the first step in his prestigious project was taken in the year 2000 with the purchase of the first vineyard.

Today, Chat Sauvage consists of 6 vineyards spread over 7.5 hectares, 60% of which is dedicated to Pinot Noir. The production is small and exclusive with only approx. 28,000 bottles per year. This Pinot Noir is one of the house’s flagships and encapsulates the best of both Rheingau and Burgundy.

Tasting notes
The wine appears with a clear, ruby ​​red color and offers complex aromas of red berries, forest floor and discreet spices. The taste is elegant and refined with silky tannins, well-integrated acidity and a long, persistent aftertaste that reflects the quality of the grapes and the careful craftsmanship of the house.

Perfect for
This Pinot Noir is the obvious choice for dishes with game and mushroom-based dishes or mature cheeses. Best served at 16-18°C to highlight its fine nuances.
